Santa Isabel farm’s cascara, that’s brewed like tea, comes from the Anacafe 14, Sarchimor and Pache coffee varieties. They are all grown on Martin and Alex Keller’s farm, on volcanic and mineral-rich soil.
After harvesting, the coffee cherries are brought to the drying beds, in the shade to avoid direct sunlight. For 20 days the Santa Isabel team monitors each cherry with utmost care.
The cherries are then taken to the drying station, where they are pulped and dried. Once dried, the pulp is washed and becomes the cascara we offer.
Cascara has been traditionally used as natural fertilizer, brewed in different ways, as well as been eaten as such. Due to its high caffeine content (110mg/l) it’s consumption is not recommended for children or during pregnancy.
Cascara is a sort of a super food that has around eight times more antioxidants than a blueberry and may help control blood glucose.
We recommend using 6g of cascara per 1dl of water (at 85-90 degrees) and brewing for 6 minutes.
