Description

Origin: India, Malabar
Variety: Mixed AA
Altitude: 1450 m
Process: Monsoon

Shaped by monsoon winds and humidity. Its roots go back to the sea voyages of the 1700s and 1800s, when coffee beans transported from India to Europe on sailing ships were exposed for months to moist sea air. During the journey, the beans became lighter in color, larger in size, and softer in acidity. Europeans grew fond of this naturally “aged” flavor. When steamships and the Suez Canal shortened the travel time to just a few weeks, the beans no longer changed in the same way — so Indian producers began replicating the process on land by exposing the beans to monsoon winds in coastal warehouses.
