This extraordinary coffee comes from a farm called San Francisco, in Apaneca, in the Ilamatepec region in El Salvador. Coffee producer Andres Salaverria has been passionate about coffee ever since he was a child and is a fifth generation producer in a family with a strong lecacy in coffee. They’ve been producing coffee in four different regions around El Salvador for a hundred years.
This coffee, that is of SL-28 variety, has gone through a carefully monitored fermentation (anaerobic) process in cherry for 300+ hours to enhance its sweet notes and dried using the mountain dry technique. This technique differs from the traditional one since from the beginning of the drying process the coffee is deposited in a thick layer, and each day the thickness of the layer increases it’s moved uphill. The thicker layer slows drying, but raises the temperature and intensity of fermentation. As a result, the coffee has more fruity notest and above average acidity.
